Ingredients

  • 2 Cups Almond Flour or Gluten-Free Baking Flour
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 2 Tbsp Konsyl Organic Psyllium Fiber
  • 1 Cup Swerve Granular (or your preferred sugar alternative)
  • 3 Large Eggs
  • 1 Tsp Vanilla Extract
  • 1/2 Cup Unsweetened Almond Milk (or your preferred milk)
  • 1/4 Cup Coconut Oil (softened)
  • 1/4 Cup Brewed Coffee
  • 1/2 Cup Unsweetened Cocoa Powder

Instructions

  • Mix Dry Ingredients
  • In a large bowl, whisk together the flour, cocoa powder, Konsyl Organic Psyllium Fiber, baking soda, baking powder, and swerve.
  • Combine the Wet Ingredients
    In a large mixing bowl, whisk together the eggs, almond milk, coconut oil, vanilla extract, and coffee until smooth.
  • Merge the Dry & Wet Ingredients
    Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  • Bake, Cool & Decorate
    Pour the batter into a greased cake pan and bake for 25-30 minutes at 350 degrees, or until a toothpick k inserted in the center comes out clean. Let the cake cool for 10 minutes then transfer to a plate to cool.
