Ingredients
- 2 Cups Almond Flour or Gluten-Free Baking Flour
- 1 Tsp Baking Powder
- 1 Tsp Baking Soda
- 2 Tbsp Konsyl Organic Psyllium Fiber
- 1 Cup Swerve Granular (or your preferred sugar alternative)
- 3 Large Eggs
- 1 Tsp Vanilla Extract
- 1/2 Cup Unsweetened Almond Milk (or your preferred milk)
- 1/4 Cup Coconut Oil (softened)
- 1/4 Cup Brewed Coffee
- 1/2 Cup Unsweetened Cocoa Powder
Instructions
- Mix Dry Ingredients
- In a large bowl, whisk together the flour, cocoa powder, Konsyl Organic Psyllium Fiber, baking soda, baking powder, and swerve.
- Combine the Wet Ingredients
In a large mixing bowl, whisk together the eggs, almond milk, coconut oil, vanilla extract, and coffee until smooth.
- Merge the Dry & Wet Ingredients
Gradually add the dry ingredients into the wet mixture, stirring until just combined.
- Bake, Cool & Decorate
Pour the batter into a greased cake pan and bake for 25-30 minutes at 350 degrees, or until a toothpick k inserted in the center comes out clean. Let the cake cool for 10 minutes then transfer to a plate to cool.
